Ingredients
Ginger Chutney
200gmsginger
100gmsgarlic100 gms
3tbspamchur powder
2tspred chilli powder
1½tspsalt
Tamarind (Imli) Chutney
200gmstamarind
3cupswater
14tbspbrown sugar
2tbspraisins
2tspcumin powder
1tspred chilli powder
1tbspchopped ginger
1tspsalt
Mint (Pudina) Chutney
25gmsmint leaves
1small raw mango (about 100 gms)
25gmsgarlic
4green chillies
6tbspwater
1tspsalt
Instructions
Ginger Chutney
Grate the ginger and garlic then grind it with a little bit of water
Mix in the dry ingredients - amchur, red chilli powder and salt
Chutney is ready!
Tamarind Chutney
Soak the tamarind in the water for 4 hours
Once soaked squeeze the tamarind well
Keep adding a little water and try to squeeze out all the juice from the tamarind
Now strain all of this to get the tamarind water
Once all the tamarind water has been squeezed out place the water on high flame
Add the other ingredients - brown sugar, raisins, cumin powder, red chilli powder, chopped ginger and salt
Mix all the ingredients well
Once it starts boiling lower the flame and cook till it thickens
You can taste - if you want to make it sweeter or spicer
Cook on medium till it thickens (could take abotu 40 minutes)
Imli/Tamarind chutney is ready to be enjoyed with any dish!
Coriander Chutney
Wash and chop the coriander
First grind the green chillies and garlic
Add 3 tablespoons of water to grind
Once ground, if you're using a small grinder slowly add the coriander and water to grind all of it. If you're using a bigger grinder add the remaining water and coriander to grind all.
The texture should be thick
Add salt
Coriander chutney is ready!
Mint (Pudina) Chutney
Chop the mint, mango, garlic and chillies so they grind well
Start with grinding the raw mango with 2 tablespoons of water
Next add the garlic and the greenchillies with 1 tablespoon water
Once these are well ground, if you have a small grinder, start adding the mint and water bit by bit. If you have a bigger grinder add all the mint and remaining water to grind.
Add salt
Mint chutnet is ready!
Notes
All 4 chutneys can be stored in air tight jars for storage in the fridge or freezer. Enjoy these, they are really tasty, do try them!
