Chicken Kofta (meatballs)

Ingredients
  

For Chicken Koftas

  • 500 grams ground chicken
  • 1 grated small onion
  • 1 tsp garlic paste
  • ½ tsp ginger paste
  • ½ tsp coriander powder
  • ½ tsp cumin powder
  • 1 tsp garam masala
  • 1 chopped green chilli
  • 2 tbsp chopped coriander leaves
  • 1 egg white
  • ½ tsp salt or to taste

For Kofta Curry

  • 1 tsp cooking oil of your choice
  • 1 bay leaf
  • 2 black cloves
  • 2 black cardamom
  • 1 green cardamom
  • 1 small piece of cinnamon
  • 20 black pepper kernels
  • 2 cups onions (350 grams)
  • 3 tsp garlic paste
  • 1 tsp ginger paste
  • ¼ tsp turmeric powder
  • 3 tsp coriander powder
  • 1 tsp kashmiri red chilli powder
  • 1 chopped green chilli
  • 2 tsp tomato paste
  • 1 tsp salt
  • 1 tsp garam masala

Instructions
 

For making Chicken Kofta

  • Mix all the ingredients for the chicken koftas well: ground chicken, onion, garlic paste, ginger paste, coriander powder, cumin powder, garam masala, chopped green chilli, coriander leaves and egg white.
  • Shape the koftas (meatballs) between your palms (add some water to your palms so they don't stick)
  • Set aside.

For the curry

  • Place a pressure cooker on a burner and add 1 teaspoon oil (this is all the oil we will be using)
  • Once the oil is hot add the "sabut" (whole) garam masalas: bay leaf, black cloves, black cardamom, green cardamom, cinnamom, black pepper kernels
  • Saute the masalas for a minute
  • Lower the flame
  • Add all remaining masalas together (except garam masala) - onion, garlic paste, ginger paste, turmeric powder, coriander powder, kashmiri chilli powder, chopped green chilli, and salt
  • Add 1 cup water
  • Mix all ingredients well
  • Now cover the pressure cooker, put the gas on high and cook for 4 whistles
  • After 4 whistles, once the cooker has cooled down cook the masalas on medium heat to a dry consistency
  • Add 1 teaspoon garam masala
  • Mix well
  • Add 3 cups water (you need more water in this curry as the chicken koftas/meatballs will cook for a while in it)
  • Once the mixture has boiled, add the koftas/meatballs to it
  • Once all the koftas/meatballs have been added to the curry, cook on high for 2-3 minutes
  • Then lower flame and cook for 30 minutes
  • The koftas/meatballs are now ready
  • You can serve and garnish with chopped coriander leaves

Notes

The meatballs do not have to be fried at any stage.
