My journey into the world of low-fat healthy cooking started in 2002 when I suddenly discovered that I had a heart condition requiring surgical treatment. This made me realize that I must change my lifestyle and my challenge became on how to prepare healthy, low-fat yet appetizing meals for myself, my husband, and my two daughters.
I started with day-to-day recipes and started scouting for tips from various sources. My research led me to conduct several experiments in the kitchen until I came up with what worked. As a result for the past 20 years, I have been cooking for myself and my family with only 1 teaspoon of oil.
Over the past several years of cooking with 1 teaspoon of oil, I have expanded my repertoire from cooking delicious daily staples to a number of special dishes, snacks, desserts, and breakfast items. My daughters have been asking me to write a book to capture all my recipes so that I could share them with others. Finally, my youngest daughter encouraged and helped me start my YouTube channel Madhu’s Healthy Kitchen, and its related website oneteaspoonoil.com.
I am delighted by the appreciation for my recipes through the numerous likes, subscribers, and comments received from family, friends as well as total strangers. I am pleased to be able to offer healthy and low-fat food options to people who are health conscious but do not want to sacrifice taste and look forward to sharing many more!
